Our vanilla genoese is a soft, moist eating cake which will keep in good condition for at least five weeks. It also freezes and defrosts very well, with some customers preferring to work on the bases semi-frozen, particularly when sculpting three dimensional novelty cakes.
Supplied in cut squares or rectangular slabs, our genoese is easy to cut to any shape, especially the sponge has been chilled in the fridge or freezer first to make it firmer. Use a cakeboard or similar as a template and a sharp serrated knife to cut your shape - just make sure to keep the knife upright!
Each cake is individually wrapped and packed in sturdy boxes to protect it during its journey to you. Just remove the baking parchment from the base of each layer, and your sponge is ready to decorate. Each cake comes with two layers in the box, both 1.25” deep - most customers use the two layers sandwiched with buttercream and jam to make one standard depth celebration cake.
